Mango Salsa

I was inspired this afternoon to make kid-friendly
Mango Salsa because we have 7 mangoes that ripened all at the same time.   It’s delicious and unique, and makes for a healthy snack to serve after school or during Sunday football games.

There are no onions – our kids go running if they see diced onions.  And for the adults –  give this snack a try during the week if you don’t want onion breath during that important meeting!

Our family weighs in:

  • Son “loves it a lot” and couldn’t stop eating it
  • Daughter gave it a “thumbs up”
  • Husband liked it
  • I thought it was yummy.

This recipe couldn’t be easier.

Mango Salsa
(by Striving Bean)

  • 1 1/2 cup (1.5 cup) finely chopped mango (That’s about 1 large mango, or 2 small to medium mangos)
  • 1/2 cup (0.5 cup) black beans (if using canned, be sure to rinse and drain well)
  • 1/4 cup (0.25 cup) dried cranberries (like Craisins)
  • 1 teaspoon orange juice

– Instructions

Mix mangoes and dried cranberries together.  Then add orange juice.  Carefully mix in black beans.  Serve with corn chips or Baked Tostitos Scoops.

(Note:  omit the dried cranberries for children under 4.  The American Academy of Pediatrics recommends to avoid dried fruit since it can be a choking hazard for very young children.)

This is my first time making mango salsa – it’s so good, I can’t believe I waited this long.

    Hello Micaela,
    I didn’t get round to eating any mangoes last year, this year I’ll be making an effort and I’ll keep in mind this salsa. I like the addition of the dried cranberries.
